A comforting and flavorful dish featuring juicy chicken breasts stuffed with creamy Brie cheese and tart Honeycrisp apples, topped with a delicious maple glaze.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 Honeycrisp apples, sliced
- 8 oz Brie cheese, cold and sliced
- 1/2 cup apple cider or juice
- 1/4 cup pure maple syrup
- 2 cloves minced garlic
- 1 tbsp Dijon mustard
- 1 tsp fresh thyme
- Salt and pepper to taste
- Toothpicks (for securing the chicken)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice a pocket into each chicken breast without cutting all the way through.
- Season the chicken with salt and pepper.
- In a bowl, combine apples, Brie cheese, garlic, Dijon mustard, and thyme; mix well.
- Stuff each chicken breast with the apple and Brie mixture and secure with toothpicks if needed.
- In a saucepan, heat the apple cider and maple syrup over medium heat until it thickens slightly.
- Bake the stuffed chicken in the preheated oven, basting periodically with the maple glaze.
- Cook until the internal temperature reaches 165°F (74°C); let rest before serving.
- Serve with additional maple glaze drizzled on top.
Notes
Serve with a side salad or roasted vegetables for a complete meal. Leftovers can be stored in an airtight container in the fridge for up to three days.
