Description

A comforting and flavorful dish featuring juicy chicken breasts stuffed with creamy Brie cheese and tart Honeycrisp apples, topped with a delicious maple glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 Honeycrisp apples, sliced
  • 8 oz Brie cheese, cold and sliced
  • 1/2 cup apple cider or juice
  • 1/4 cup pure maple syrup
  • 2 cloves minced garlic
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme
  • Salt and pepper to taste
  • Toothpicks (for securing the chicken)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast without cutting all the way through.
  3. Season the chicken with salt and pepper.
  4. In a bowl, combine apples, Brie cheese, garlic, Dijon mustard, and thyme; mix well.
  5. Stuff each chicken breast with the apple and Brie mixture and secure with toothpicks if needed.
  6. In a saucepan, heat the apple cider and maple syrup over medium heat until it thickens slightly.
  7. Bake the stuffed chicken in the preheated oven, basting periodically with the maple glaze.
  8. Cook until the internal temperature reaches 165°F (74°C); let rest before serving.
  9. Serve with additional maple glaze drizzled on top.

Notes

Serve with a side salad or roasted vegetables for a complete meal. Leftovers can be stored in an airtight container in the fridge for up to three days.
