Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 pound chicken breasts, boneless and skinless (450 g)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1/2 teaspoon smoked paprika (1 g)
  • 4 slices turkey bacon
  • 1 cup pumpkin puree (240 g)
  • 1/4 cup maple syrup (60 ml)
  • 1 teaspoon garlic powder (2 g)
  • 1 teaspoon onion powder (2 g)
  • 1/2 cup chicken broth (120 ml)
  • 1 tablespoon fresh thyme leaves (3 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt, black pepper, and smoked paprika.
  4. Add the seasoned chicken to the skillet and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the turkey bacon slices and cook until crispy.
  7. Remove the bacon from the skillet and crumble it into small pieces.
  8. In a bowl, mix pumpkin puree, maple syrup, garlic powder, and onion powder.
  9. Add the remaining tablespoon of olive oil to the skillet.
  10. Pour the pumpkin mixture into the skillet, stirring to combine.
  11. Stir in the chicken broth and bring the mixture to a simmer.
  12. Return the seared chicken breasts to the skillet.
  13. Spoon the pumpkin sauce over the chicken to coat.
  14. Sprinkle crumbled bacon and fresh thyme leaves over the chicken.
  15. Transfer the skillet to the preheated oven.
  16. Bake for 20-25 minutes or until the chicken is cooked through.
