Ingredients

- 4 slices turkey bacon
- 1 cup pumpkin puree (240 g)
- 1/4 cup maple syrup (60 ml)
- 1 teaspoon garlic powder (2 g)
- 1 teaspoon onion powder (2 g)
- 1/2 cup chicken broth (120 ml)
- 1 tablespoon fresh thyme leaves (3 g)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, black pepper, and smoked paprika.
- Add the seasoned chicken to the skillet and sear for 3-4 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the turkey bacon slices and cook until crispy.
- Remove the bacon from the skillet and crumble it into small pieces.
- In a bowl, mix pumpkin puree, maple syrup, garlic powder, and onion powder.
- Add the remaining tablespoon of olive oil to the skillet.
- Pour the pumpkin mixture into the skillet, stirring to combine.
- Stir in the chicken broth and bring the mixture to a simmer.
- Return the seared chicken breasts to the skillet.
- Spoon the pumpkin sauce over the chicken to coat.
- Sprinkle crumbled bacon and fresh thyme leaves over the chicken.
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes or until the chicken is cooked through.
- Remove from the oven and let rest for 5 minutes before serving.
