Description

Delicious muffins merging sweet maple syrup and crispy bacon for a portable breakfast treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • ¼ cup maple syrup, plus more for serving
  • 2 tablespoons melted unsalted butter
  • ½ cup cooked and crumbled bacon


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  3. In another bowl, beat the egg, then add in the buttermilk, maple syrup, and melted butter. Mix these wet ingredients until thoroughly blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; some lumps are fine.
  5. Fold in the cooked and crumbled bacon.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 15-18 minutes until golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from the tin and allow to cool on a wire rack for a few minutes. Serve warm with additional maple syrup.
