A delightful mango curd tart featuring sweet mango pulp and zesty lime, combining tropical flavors and a buttery crust.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1 tablespoon cold water
- 1 cup mango puree (fresh or canned)
- 3/4 cup granulated sugar
- 3 eggs
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/4 cup unsalted butter, melted
- Whipped cream or fresh fruit for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour, powdered sugar, and salt. Add chilled butter, mixing until it resembles coarse crumbs.
- Stir in the egg yolk and cold water until the dough comes together.
- Press the dough into a tart pan and poke holes in the bottom. Bake for 15-20 minutes until golden.
- In a saucepan, combine mango puree, sugar, eggs, lime juice, and zest. Cook over medium heat, stirring constantly until it thickens.
- Remove from heat and stir in melted butter.
- Pour the mango curd into the baked crust, smoothing the top.
- Bake for another 15 minutes.
- Let cool completely, then top with whipped cream or fresh fruit before serving.
Notes
Use fresh ingredients for the best results, and allow the tart to cool completely before slicing for easier serving.
