Ingredients

  • 2 boneless skinless chicken breasts
  • 5 cup (1200 ml) s baby spinach
  • 4 mandarins, peeled and separated
  • 1 avocado, ripe and diced
  • 1 English cucumber, sliced
  • 2 green onions, chopped
  • 1/4 cup (60 ml) slivered almonds
  • Sprinkle black and white sesame seeds
  • 1 recipe lemon vinaigrette


Instructions

  1. Combine the ingredients for the vinaigrette, reserving a quarter, and transfer the rest to a container with the chicken for marinating. Ideally, marinate for several hours, though half an hour will suffice.
  2. Set your oven to 425°F and place the marinated chicken breasts in a baking dish. Cook them in the oven for 20-25 minutes until they are fully done.
  3. Use a fork or a stand mixer to tear the chicken into pieces. In a large bowl, mix all the components together. Pour the remaining lemon vinaigrette over the top.
