Delicious and filling make-ahead breakfast bowls featuring roasted potatoes, sausage, scrambled eggs, and cheese, perfect for busy mornings.
Ingredients
- 7 medium red potatoes, washed and diced
- 1 pound breakfast sausage
- 6 large eggs
- A splash of milk (optional)
- 1 green bell pepper, diced
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- Wash and dice the red potatoes into small cubes. Place them on a greased baking sheet in a single layer, then sprinkle with salt and pepper.
- Roast for 20-25 minutes until golden and tender.
- Meanwhile, cook the sausage in a large skillet on medium heat, adding the diced green bell pepper until the sausage is fully browned.
- Drain if needed and set aside.
- In a medium bowl, beat the eggs with a splash of milk and add salt and pepper. Scramble the eggs in a pan until just fully cooked.
- Pour the scrambled eggs into the pan with the sausage mixture, stirring until fully combined.
- When the potatoes finish roasting, divide them evenly among 6 containers. Then, add the sausage and egg mixture on top.
- Sprinkle the tops with 2 tablespoons of shredded cheddar cheese.
- Allow the bowls to cool completely, then place lids on tightly and store in the fridge until ready to use.
