- 21 oz can of lemon pie filling or homemade equivalent
Instructions
- Preheat the oven to 350°F and grease a baking dish.
- Mix the flour, baking powder, salt, and sugar in a mixing bowl; whisk to combine.
- Add the buttermilk, vanilla, and lemon extract, and stir until smooth.
- Pour the batter over the melted butter in the baking dish without stirring.
- Add the lemon pie filling evenly over the batter.
- Bake for about 40-45 minutes until golden brown.
- Let the cobbler cool for 10-15 minutes before cutting.
