Description

A delicious and comforting pizza casserole made without the crust, perfect for low carb diets.


Ingredients

  • 1 lb ground beef
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 2 cups marinara sauce (low carb)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with the chopped onions and bell peppers. Drain excess fat.
  3. Stir in the marinara sauce, Italian seasoning, garlic powder, salt, and black pepper until well combined.
  4. Grease your baking dish and spread half of the meat mixture in the bottom.
  5. Add half of the shredded mozzarella cheese and half of the pepperoni on top.
  6. Repeat the layering with the remaining meat mixture, mozzarella cheese, and pepperoni.
  7. Finish with a sprinkle of Parmesan cheese on top.
  8. Bake for 25-30 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

Feel free to customize the veggies based on your family’s preferences. You can also experiment with different low carb marinara sauces for added flavor.
