Description

A savory low carb meatloaf made with lean ground beef, vegetables, and cheeses, perfect for family dinners or meal prepping.


Ingredients

  • 1 pound lean ground beef
  • 1/2 medium-sized onion, finely diced
  • 1 green pepper, finely diced
  • 1 clove garlic, minced
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/2 cup finely shredded cheddar cheese
  • 1/4 cup finely grated Parmesan cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 slices thin bacon
  • 4 tablespoons sugar-free barbecue sauce


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely dice the onion, green pepper, and garlic, or pulse in a food processor until minced.
  3. In a large bowl, combine the ground beef, eggs, almond flour, cheddar cheese, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use two forks just until combined, avoiding overmixing.
  4. Shape the mixture into a loaf about 4 inches thick and place it on a large rimmed baking sheet covered in foil or in a baking dish.
  5. Brush half of the barbecue sauce over the top surface of the meatloaf.
  6. Lay the bacon slices over the meatloaf.
  7. Place the pan in the preheated oven and bake for 25 minutes.
  8. Increase the heat to 425°F (220°C) and bake for an additional 10 minutes.
  9. Brush the barbecue sauce over the bacon and continue cooking until the internal temperature reaches 160°F (71°C).
  10. Remove the pan from the oven and let it rest for 5 minutes before serving.

Notes

Let the meatloaf rest before slicing to allow juices to redistribute. Use a meat thermometer for accuracy in checking doneness.
