Description
A nostalgic low carb meatloaf made with lean ground beef and keto bread, perfect for family dinners.
Ingredients
- 2 lbs Lean Ground Beef
- 1/2 cup Onions – Finely Chopped
- 2 large Eggs
- 1/3 cup Sugar Free Ketchup
- 2 tsp Prepared Mustard
- 1/2 tsp Salt
- 1/4 tsp Ground Black Pepper
- 4 slices Keto Bread
- 1/4 cup Parmesan Cheese
- 1/4 cup Sugar Free Ketchup
- 1 Tbsp Prepared Mustard
- 2 tsp Splenda Granulated Sweetener
- Fresh herbs for garnish (optional)
Instructions
- Preheat oven to 400°F.
- Toast the 4 slices of keto bread until golden brown.
- Using a food processor, pulse the toasted keto bread into fine bread crumbs.
- In a large mixing bowl, combine the ground beef, finely chopped onions, eggs, sugar-free ketchup, prepared mustard, Parmesan cheese, salt, and pepper. Mix well until everything is uniformly blended.
- Press the meat mixture into a loaf pan and smooth out the top for even cooking.
- In a small mixing bowl, combine the sauce ingredients—the sugar-free ketchup, prepared mustard, and Splenda sweetener.
- Spread the sauce evenly across the top of the meatloaf.
- Bake in the preheated oven for approximately 45 minutes until the meatloaf reaches a safe internal temperature of 160°F.
- Remove the meatloaf from the oven and allow it to sit for 10-15 minutes before serving.
- Carefully remove the meatloaf from the pan and transfer it to a cutting board.
- Slice into eight equal portions and serve hot.
Notes
For added moisture, consider incorporating grated zucchini or mushrooms into the meat mixture.
