Description

A nostalgic low carb meatloaf made with lean ground beef and keto bread, perfect for family dinners.


Ingredients

  • 2 lbs Lean Ground Beef
  • 1/2 cup Onions – Finely Chopped
  • 2 large Eggs
  • 1/3 cup Sugar Free Ketchup
  • 2 tsp Prepared Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 4 slices Keto Bread
  • 1/4 cup Parmesan Cheese
  • 1/4 cup Sugar Free Ketchup
  • 1 Tbsp Prepared Mustard
  • 2 tsp Splenda Granulated Sweetener
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat oven to 400°F.
  2. Toast the 4 slices of keto bread until golden brown.
  3. Using a food processor, pulse the toasted keto bread into fine bread crumbs.
  4. In a large mixing bowl, combine the ground beef, finely chopped onions, eggs, sugar-free ketchup, prepared mustard, Parmesan cheese, salt, and pepper. Mix well until everything is uniformly blended.
  5. Press the meat mixture into a loaf pan and smooth out the top for even cooking.
  6. In a small mixing bowl, combine the sauce ingredients—the sugar-free ketchup, prepared mustard, and Splenda sweetener.
  7. Spread the sauce evenly across the top of the meatloaf.
  8. Bake in the preheated oven for approximately 45 minutes until the meatloaf reaches a safe internal temperature of 160°F.
  9. Remove the meatloaf from the oven and allow it to sit for 10-15 minutes before serving.
  10. Carefully remove the meatloaf from the pan and transfer it to a cutting board.
  11. Slice into eight equal portions and serve hot.

Notes

For added moisture, consider incorporating grated zucchini or mushrooms into the meat mixture.
