Ingredients
- 4 large sweet potatoes (1.8 kg)
- 450 g beef bacon, cut into 1/2-inch pieces
- 180 ml thinly sliced green onions, plus more for garnish
- 170 g sharp Cheddar cheese, shredded
- 120 ml sour cream
- 1 large egg, beaten
- 10 g salt
- 5 g smoked paprika
- 5 g freshly ground black pepper
Instructions
- Set your oven to 400 degrees F (200 degrees C) and prepare a baking tray with aluminum foil. Arrange the sweet potatoes on the tray and puncture them multiple times using a sharp knife.
- Place in the heated oven and cook until they become soft enough to pierce easily with a knife, approximately 1 hour. Once done, set them aside to cool slightly, but keep the oven on.
- In a cold pan, begin cooking the beef bacon over medium-high heat, stirring occasionally as the fat starts to melt. Lower the heat to medium and continue cooking until the bacon is fully browned and crispy, then drain the fat for future use.
- Remove the flesh from the sweet potatoes into a bowl, discarding the skins. Use a spoon to break down the sweet potato flesh into smaller, more uniform pieces, achieving your desired texture.
- Mix in half of the bacon, ¾ cup of green onions, ⅔ of the cheese, ½ cup of sour cream, the beaten egg, salt, smoked paprika, and black pepper, stirring until everything is well combined.
- Move the sweet potato mixture to a shallow 2-quart baking dish, leaving the top uneven for texture. Sprinkle the remaining bacon over the top, followed by the rest of the cheese.
- Return the dish to the oven, baking until the top is golden and the casserole is thoroughly heated and bubbling at the edges, which should take 30 to 35 minutes.
- Finish by topping with additional sliced green onions and a dollop of sour cream before serving.
