Description

Crispy and cheesy fiesta potato bowls perfect for gatherings, featuring customizable toppings and a hearty mix of ingredients.


Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning (or homemade)
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Optional: diced tomatoes, corn, jalapeños, olives


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil and season them with chili powder, smoked paprika, garlic powder, ground cumin, salt, and pepper.
  3. Spread the seasoned potatoes evenly on a baking sheet and roast for about 25–30 minutes, flipping them halfway, until they become crispy and golden.
  4. While the potatoes are roasting, brown the ground beef in a skillet over medium heat. Once fully cooked, add the taco seasoning and a little water, then let simmer until thickened.
  5. When the potatoes finish roasting, transfer them to bowls while they’re still hot. Sprinkle cheese over the potatoes to let it melt beautifully.
  6. Top your loaded fiesta potato bowls with the seasoned beef or black beans, and layer on your favorite toppings.
  7. Finish with dollops of sour cream, a drizzle of salsa, and a sprinkle of chopped cilantro.
