Ingredients

  • – 2 lbs (900 g) Ground Beef
  • – 1 Whole White Onion, cubed
  • – 28 oz (794 g) Tomatoes, peeled and chopped
  • – 2 cups (480 ml) Beef Broth
  • – 2 1/2 tbsp (38 ml) Minced Garlic
  • – 2 tbsp (30 ml) Chipotle Puree
  • – 2 tbsp (30 ml) Guajillo Chili Powder
  • – 1 1/2 tbsp (23 ml) Ground Cumin
  • – 1 1/2 tbsp (23 ml) Garlic Powder
  • – 1 tbsp (15 ml) Black Pepper
  • – 1 tbsp (15 ml) Sea Salt
  • – 3-4 lbs (1.4-1.8 kg) Cooked Fries, seasoned
  • – 2 cups (200 g) Shredded Cheddar Cheese
  • – Diced Red Onions for garnish
  • – Sliced Jalapenos for garnish
  • – Chopped Cilantro for garnish
  • – Plain Yogurt for garnish


Instructions

  1. Get your grill ready for direct heat cooking at roughly 350°F (175°C).
  2. Place a dutch oven onto the grill to warm up for a couple of minutes, then add a bit of oil.
  3. Introduce the ground beef, allowing it to brown for approximately 2.5 to 3 minutes. Remove the browned beef and set it aside.
  4. Return the empty dutch oven to the grill and toss in the cubed white onion and minced garlic. Cook until they start to brown, about 2 minutes.
  5. Mix in the guajillo chili powder, ground cumin, garlic powder, black pepper, and sea salt. Stir to combine the spices with the vegetables for one minute.
  6. Add the ground beef back into the pot, along with the beef broth, chipotle puree, and chopped tomatoes. Stir everything together thoroughly, then cover the dutch oven.
  7. Lower the heat to between 300°F and 325°F (150°C to 163°C) and allow the chili to simmer until it thickens, roughly 1.5 to 2 hours, stirring occasionally. If it becomes too thick, add more beef broth as needed.
  8. While the chili is simmering, prepare your fries, either freshly made or from a pre-packaged variety. Place them on a large serving dish.
  9. Once the chili has thickened to your liking, sprinkle a generous amount of shredded cheddar cheese over the fries, then ladle some of the chili on top.
  10. Garnish the chili with additional shredded cheese, diced red onions, sliced jalapenos, chopped cilantro, and a dollop of plain yogurt.
  11. Serve promptly and enjoy your meal!
