Ingredients
- – 2 lbs (900 g) Ground Beef
- – 1 Whole White Onion, cubed
- – 28 oz (794 g) Tomatoes, peeled and chopped
- – 2 cups (480 ml) Beef Broth
- – 2 1/2 tbsp (38 ml) Minced Garlic
- – 2 tbsp (30 ml) Chipotle Puree
- – 2 tbsp (30 ml) Guajillo Chili Powder
- – 1 1/2 tbsp (23 ml) Ground Cumin
- – 1 1/2 tbsp (23 ml) Garlic Powder
- – 1 tbsp (15 ml) Black Pepper
- – 1 tbsp (15 ml) Sea Salt
- – 3-4 lbs (1.4-1.8 kg) Cooked Fries, seasoned
- – 2 cups (200 g) Shredded Cheddar Cheese
- – Diced Red Onions for garnish
- – Sliced Jalapenos for garnish
- – Chopped Cilantro for garnish
- – Plain Yogurt for garnish
Instructions
- Get your grill ready for direct heat cooking at roughly 350°F (175°C).
- Place a dutch oven onto the grill to warm up for a couple of minutes, then add a bit of oil.
- Introduce the ground beef, allowing it to brown for approximately 2.5 to 3 minutes. Remove the browned beef and set it aside.
- Return the empty dutch oven to the grill and toss in the cubed white onion and minced garlic. Cook until they start to brown, about 2 minutes.
- Mix in the guajillo chili powder, ground cumin, garlic powder, black pepper, and sea salt. Stir to combine the spices with the vegetables for one minute.
- Add the ground beef back into the pot, along with the beef broth, chipotle puree, and chopped tomatoes. Stir everything together thoroughly, then cover the dutch oven.
- Lower the heat to between 300°F and 325°F (150°C to 163°C) and allow the chili to simmer until it thickens, roughly 1.5 to 2 hours, stirring occasionally. If it becomes too thick, add more beef broth as needed.
- While the chili is simmering, prepare your fries, either freshly made or from a pre-packaged variety. Place them on a large serving dish.
- Once the chili has thickened to your liking, sprinkle a generous amount of shredded cheddar cheese over the fries, then ladle some of the chili on top.
- Garnish the chili with additional shredded cheese, diced red onions, sliced jalapenos, chopped cilantro, and a dollop of plain yogurt.
- Serve promptly and enjoy your meal!
