Ingredients
- 2 Cup (480 ml) s chicken, shredded or cubed (I like rotisserie)
- 1 Cup (240 ml) celery, finely chopped
- 1 Cup (240 ml) sharp cheddar cheese, shredded
- 1/2 Cup (120 ml) beef bacon, crumbled
- 1/2 Cup (120 ml) sour cream
- 1/4 Cup (60 ml) mayonnaise
- 1/4 Cup (60 ml) yellow onion, finely chopped
- 3 Green onions, sliced
- Salt & Pepper, to taste (about 1/4-1/2 tsp (3 ml) each)
Instructions
- Combine the shredded chicken, chopped celery, sliced onions, crumbled bacon, and shredded cheese in a large mixing bowl.
- Add the mayonnaise and sour cream on top of the mixture.
- Stir thoroughly until all ingredients are well mixed and coated evenly.
- Adjust the flavor with salt and pepper according to your preference; I typically use ½-1 teaspoon for each.
- Enjoy the salad on toast, stuffed in an avocado or tomato, wrapped in lettuce, served with crackers, or however you like your chicken salad.
