Ingredients

  • 2 Cup (480 ml) s chicken, shredded or cubed (I like rotisserie)
  • 1 Cup (240 ml) celery, finely chopped
  • 1 Cup (240 ml) sharp cheddar cheese, shredded
  • 1/2 Cup (120 ml) beef bacon, crumbled
  • 1/2 Cup (120 ml) sour cream
  • 1/4 Cup (60 ml) mayonnaise
  • 1/4 Cup (60 ml) yellow onion, finely chopped
  • 3 Green onions, sliced
  • Salt & Pepper, to taste (about 1/4-1/2 tsp (3 ml) each)


Instructions

  1. Combine the shredded chicken, chopped celery, sliced onions, crumbled bacon, and shredded cheese in a large mixing bowl.
  2. Add the mayonnaise and sour cream on top of the mixture.
  3. Stir thoroughly until all ingredients are well mixed and coated evenly.
  4. Adjust the flavor with salt and pepper according to your preference; I typically use ½-1 teaspoon for each.
  5. Enjoy the salad on toast, stuffed in an avocado or tomato, wrapped in lettuce, served with crackers, or however you like your chicken salad.
