Ingredients

  • 2 pounds (907 g) boneless, skinless chicken breasts (about 907 grams)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1/2 teaspoon (3 ml) black pepper (1 gram)
  • 1 teaspoon (5 ml) garlic powder (2 grams)
  • 1 teaspoon (5 ml) onion powder (2 grams)
  • 2 cups barbecue sauce (480 ml)
  • 4 cups (960 ml) frozen diced potatoes (about 680 grams)
  • 1 cup (240 ml) shredded cheddar cheese (about 113 grams)
  • 1 cup (240 ml) shredded mozzarella cheese (about 113 grams)
  • 1/2 cup plain yogurt (120 ml)
  • 1/4 cup (60 ml) chopped green onions (about 25 grams)
  • 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
  • 1 cup (240 ml) cooked peas (about 165 grams)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Dice the chicken breasts into bite-sized pieces.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add chicken to the skillet.
  5. Season the chicken with salt, pepper, garlic powder, and onion powder.
  6. Cook the chicken until browned and cooked through, about 6-8 minutes.
  7. Remove the cooked chicken from the skillet and set aside.
  8. In a large mixing bowl, combine barbecue sauce and sour cream.
  9. Add cooked chicken, frozen diced potatoes, corn, and half of the cheddar and mozzarella cheese to the bowl.
  10. Mix everything until well combined.
  11. Transfer the mixture to a greased casserole dish.
  12. Spread the mixture evenly in the dish.
  13. Sprinkle the remaining cheddar and mozzarella cheese over the top.
  14. Cover the casserole with aluminum foil.
  15. Bake in the preheated oven for 25 minutes.
  16. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  17. Remove the casserole from the oven and let it cool for a few minutes.
  18. Garnish the casserole with chopped green onions and cilantro.
