Ingredients
- 2 pounds (907 g) boneless, skinless chicken breasts (about 907 grams)

- 1/2 teaspoon (3 ml) black pepper (1 gram)
- 1 teaspoon (5 ml) garlic powder (2 grams)
- 1 teaspoon (5 ml) onion powder (2 grams)
- 2 cups barbecue sauce (480 ml)
- 4 cups (960 ml) frozen diced potatoes (about 680 grams)
- 1 cup (240 ml) shredded cheddar cheese (about 113 grams)
- 1 cup (240 ml) shredded mozzarella cheese (about 113 grams)
- 1/2 cup plain yogurt (120 ml)
- 1/4 cup (60 ml) chopped green onions (about 25 grams)
- 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
- 1 cup (240 ml) cooked peas (about 165 grams)
Instructions
- Preheat the oven to 375°F (190°C).
- Dice the chicken breasts into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat.
- Add chicken to the skillet.
- Season the chicken with salt, pepper, garlic powder, and onion powder.
- Cook the chicken until browned and cooked through, about 6-8 minutes.
- Remove the cooked chicken from the skillet and set aside.
- In a large mixing bowl, combine barbecue sauce and sour cream.
- Add cooked chicken, frozen diced potatoes, corn, and half of the cheddar and mozzarella cheese to the bowl.
- Mix everything until well combined.
- Transfer the mixture to a greased casserole dish.
- Spread the mixture evenly in the dish.
- Sprinkle the remaining cheddar and mozzarella cheese over the top.
- Cover the casserole with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Remove the casserole from the oven and let it cool for a few minutes.
- Garnish the casserole with chopped green onions and cilantro.
- Serve warm and enjoy.
