Ingredients

  • 2 cups (480 ml) shredded cooked beef (about 500 grams)
  • 1 tablespoon olive oil (15 ml)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce (240 ml)
  • 1 bag tortilla chips (about 340 grams)
  • 2 cups (480 ml) shredded cheddar cheese (about 200 grams)
  • 1 cup (240 ml) canned black beans, drained and rinsed (about 240 grams)
  • 1 cup (240 ml) corn kernels, fresh or frozen (about 160 grams)
  • 1 jalapeño, sliced
  • 1 avocado, diced
  • 1/4 cup sour cream (60 ml)
  • 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
  • 1 lime, cut into wedges


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a pan over medium heat.
  3. Add diced onion to the pan and sauté until softened.
  4. Add minced garlic and cook for 1 minute.
  5. Stir in shredded cooked beef and barbecue sauce.
  6. Cook the beef mixture until heated through, about 5 minutes.
  7. Spread tortilla chips evenly on a large baking sheet.
  8. Sprinkle half of the shredded cheddar cheese over the chips.
  9. Spoon the beef mixture evenly over the cheese-covered chips.
  10. Distribute black beans and corn kernels over the beef mixture.
  11. Top with the remaining shredded cheddar cheese.
  12. Bake in the preheated oven for 10-15 minutes, until cheese is melted.
  13. Remove nachos from the oven and let cool slightly.
  14. Garnish with sliced jalapeño, diced avocado, and chopped cilantro.
  15. Drizzle sour cream over the top of the nachos.
  16. Serve with lime wedges on the side.
