Ingredients
- 2 cups (480 ml) shredded cooked beef (about 500 grams)
- 1 tablespoon olive oil (15 ml)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup barbecue sauce (240 ml)
- 1 bag tortilla chips (about 340 grams)
- 2 cups (480 ml) shredded cheddar cheese (about 200 grams)
- 1 cup (240 ml) canned black beans, drained and rinsed (about 240 grams)
- 1 cup (240 ml) corn kernels, fresh or frozen (about 160 grams)
- 1 jalapeño, sliced
- 1 avocado, diced
- 1/4 cup sour cream (60 ml)
- 1/4 cup (60 ml) chopped fresh cilantro (about 15 grams)
- 1 lime, cut into wedges
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a pan over medium heat.
- Add diced onion to the pan and sauté until softened.
- Add minced garlic and cook for 1 minute.
- Stir in shredded cooked beef and barbecue sauce.
- Cook the beef mixture until heated through, about 5 minutes.
- Spread tortilla chips evenly on a large baking sheet.
- Sprinkle half of the shredded cheddar cheese over the chips.
- Spoon the beef mixture evenly over the cheese-covered chips.
- Distribute black beans and corn kernels over the beef mixture.
- Top with the remaining shredded cheddar cheese.
- Bake in the preheated oven for 10-15 minutes, until cheese is melted.
- Remove nachos from the oven and let cool slightly.
- Garnish with sliced jalapeño, diced avocado, and chopped cilantro.
- Drizzle sour cream over the top of the nachos.
- Serve with lime wedges on the side.
