Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 1 tablespoon (15 ml) vegetable oil (15 milliliters)
  • 1/2 cup (120 ml) barbecue sauce (120 milliliters)
  • 1 cup (240 ml) shredded cheddar cheese (115 grams)
  • 1 cup (240 ml) shredded moz zarella cheese (115 grams)
  • 1/2 cup (120 ml) cooked beef bacon, chopped (75 grams)
  • 1/4 cup (60 ml) diced red onion (40 grams)
  • 1/4 cup (60 ml) diced pickles (40 grams)
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • 1/2 teaspoon (3 ml) black pepper (2.5 grams)
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 6 large flour tortillas
  • Optional : Lettuce, sliced tomatoes, and ranch dressing for serving


Instructions

  1. Heat a large skillet over medium heat and add the vegetable oil.
  2. Add the ground beef to the skillet and cook until browned, about 5-7 minutes.
  3. Drain excess fat from the skillet.
  4. Stir in the barbecue sauce, garlic powder, onion powder, black pepper, and salt with the beef.
  5. Cook for another 2-3 minutes, allowing the mixture to thicken slightly.
  6. Remove the beef mixture from the skillet and set aside.
  7. Clean the skillet and place it back on medium heat.
  8. Lay a flour tortilla flat on a clean surface.
  9. Sprinkle a layer of shredded cheddar and mozzarella cheese over half of the tortilla.
  10. Top the cheese with a spoonful of the beef mixture.
  11. Add a layer of chopped beef bacon, diced red onion, and diced pickles on top.
  12. Sprinkle more cheddar and mozzarella cheese over the fillings.
  13. Fold the tortilla in half to enclose the filling.
  14. Place the folded tortilla in the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
  15. Remove from the skillet and let cool slightly before slicing into rolls.
  16. Repeat the process with the remaining tortillas and fillings.
  17. Serve the quesadilla rolls with optional lettuce, sliced tomatoes, and ranch dressing.
