Ingredients
- 2-3 Skirt Steaks
- 3 tbsp (45 ml) Jalapeño Lime Pilsner Rub
- 5 tbsp (23 ml) FYR BLK Hot Sauce
- 1 medium Lime juiced
- 3-4 Russet Potatoes
- 2 tbsp (30 ml) Beef Tallow
- 2 tbsp (30 ml) Kosher Salt
- 2 tbsp (30 ml) Black Pepper
- 2 tbsp (30 ml) Garlic Powder
- Melted Butter
- Shredded Cheese
- Chopped Scallions
- Pico de Gallo
- Sour Cream
- Queso
Instructions
- Heat your grill to a medium-high setting, approximately 375°F.
- Pierce the Russet potatoes using a fork.
- Coat them with beef tallow and liberally sprinkle with kosher salt, black pepper, and garlic powder.
- Encase them securely in foil, then position them at the edge of the heat to bake.
- Turn the potatoes every 5-7 minutes and cook them until they are fully tender, which should take about 1 to 1.5 hours. Once cooked, remove them and keep warm until needed.
- While the potatoes are roasting, cover your skirt steaks with FYR BLK Hot Sauce, lime juice, and Jalapeño Lime Pilsner Rub.
- Allow them to marinate in the refrigerator for 1 hour, then take them out.
- Place your steaks on the hottest section of the grill and grill for 2-4 minutes on each side, or until they reach an internal temperature of 120°F.
- After cooking, remove the steaks and let them rest for 5 minutes before cutting them into small cubes, setting them aside afterward.
- Retrieve the potatoes and remove the foil.
- Make a cut in the potatoes and pour melted butter inside. Stir the butter with the softened potato, then finish with shredded cheese, queso, the chopped steak, pico de gallo, sour cream, and sliced scallions. Serve and enjoy!
