Ingredients
- – 6 large potatoes (about 1.4 kg)
- – 1/4 cup unsalted butter (60 g)
- – 4 oz cream cheese (113 g)
- – 2/3 cup sour cream (160 ml)
- – 1/2 cup milk (120 ml)
- – 1/2 teaspoon (3 ml) garlic powder
- – salt and pepper, to taste
- – 2 cups cheddar cheese, shredded (200 g)
- – 1 1/2 cup beef bacon, cooked and crumbled (225 g)
- – 1/4 cup green onions, diced (25 g)
Instructions
- Set your oven to preheat at 375°F. Lightly coat a 9×13 baking dish with nonstick spray.
- Clean, peel, and chop the potatoes, then place them in a large saucepan. Fill with water and boil until the potatoes are soft.
- Drain the water from the potatoes and return them to the empty pot. Carefully mix in the butter, cream cheese, sour cream, and milk.
- Gently incorporate the garlic powder, salt, and pepper, then add 1 1/2 cups of cheddar cheese and 1 cup of crumbled bacon. Pour this mixture into your prepared baking dish.
- Sprinkle the remaining cheese and bacon over the top of the potatoes. Place in the oven and bake for 25-30 minutes.
- After baking, remove the casserole from the oven, garnish with diced green onions, and serve.
