Ingredients

  • – 6 large potatoes (about 1.4 kg)
  • – 1/4 cup unsalted butter (60 g)
  • – 4 oz cream cheese (113 g)
  • – 2/3 cup sour cream (160 ml)
  • – 1/2 cup milk (120 ml)
  • – 1/2 teaspoon (3 ml) garlic powder
  • – salt and pepper, to taste
  • – 2 cups cheddar cheese, shredded (200 g)
  • – 1 1/2 cup beef bacon, cooked and crumbled (225 g)
  • – 1/4 cup green onions, diced (25 g)


Instructions

  1. Set your oven to preheat at 375°F. Lightly coat a 9×13 baking dish with nonstick spray.
  2. Clean, peel, and chop the potatoes, then place them in a large saucepan. Fill with water and boil until the potatoes are soft.
  3. Drain the water from the potatoes and return them to the empty pot. Carefully mix in the butter, cream cheese, sour cream, and milk.
  4. Gently incorporate the garlic powder, salt, and pepper, then add 1 1/2 cups of cheddar cheese and 1 cup of crumbled bacon. Pour this mixture into your prepared baking dish.
  5. Sprinkle the remaining cheese and bacon over the top of the potatoes. Place in the oven and bake for 25-30 minutes.
  6. After baking, remove the casserole from the oven, garnish with diced green onions, and serve.
