Ingredients
- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder

- 2 large eggs
- 1/2 cup milk
- Zest of 1 lemon
- Juice of 1 lemon
- Butter for cooking
Instructions
- In a large bowl, combine ricotta cheese, eggs, milk, lemon zest, and lemon juice. Mix until well combined.
- In another bowl, whisk together flour, sugar, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Heat a non-stick skillet over medium heat and add a little butter.
- Pour batter onto the skillet to form pancakes. Cook until bubbles form, then flip and cook until golden brown.
