Description

Fluffy lemon ricotta pancakes with a creamy texture and zesty flavor that brighten up any meal.


Ingredients

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Butter for cooking


Instructions

  1. In a large bowl, combine ricotta cheese, eggs, milk, lemon zest, and lemon juice. Mix until well combined.
  2. In another bowl, whisk together flour, sugar, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
