A refreshing and uplifting dish showcasing the vibrant flavors of lemon combined with buttery rice.
Ingredients
- 2 cups long-grain white rice, such as basmati
- 4 tablespoons butter
- 1/2 teaspoon salt
- 3 cups water
- Zest and juice of 1 lemon
- 1/8 teaspoon turmeric (optional)
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Rinse the rice in a bowl or fine mesh strainer under cold water until the water runs clear, about 1 minute.
- In a medium pot, melt the butter over medium heat. Add the rinsed rice and salt, and cook for about 3 minutes, stirring occasionally, until the rice is slightly toasted.
- Add the water, lemon zest, and lemon juice to the pot. Bring the mixture to a boil. Once boiling, reduce the heat to low and cover. Let the rice simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let the rice sit, covered, for 5-10 minutes.
- If desired, sprinkle turmeric over the rice and fluff with a fork to combine. Garnish with chopped parsley before serving.
Notes
Experiment with adding garlic or shallots when toasting the rice for extra flavor. Using vegetable broth instead of water enhances the taste.
