Description

A vibrant and nourishing lemon lentil soup filled with the goodness of red lentils, fresh vegetables, and aromatic spices, perfect for cozy nights.


Ingredients

  • 1 cup red lentils
  • 1 medium onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1/2 cup fresh lemon juice
  • 4 cups vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • Salt and pepper to taste


Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add the diced onion and carrots, cooking for about 5 minutes until softened.
  3. Add the minced garlic, turmeric, and cumin, stirring for another minute until fragrant.
  4. Stir in the red lentils, ensuring they coat with the spice mixture.
  5. Pour in the vegetable broth and bring to a boil, then reduce heat to low and simmer.
  6. Cover and cook for 20-25 minutes, stirring occasionally, until the lentils break down and the soup thickens to your desired consistency.
  7. Remove from heat and stir in the fresh lemon juice.
  8. Season with salt and pepper to taste, adjusting the lemon juice as desired for brightness.
  9. Ladle soup into bowls, garnishing with fresh chopped parsley and optional lemon slices.
  10. Serve hot, perhaps with crusty bread for dipping.

Notes

Feel free to add other vegetables like diced potatoes or spinach. Adjust seasoning and spices to your taste.
