Ingredients

  • 8 pieces Green Chiles, roasted, peeled, and seeded (160 g)
  • 1 1/2 cups Monterey Jack Cheese, Grated (170 g)
  • 5 pieces Large Eggs
  • 2 cups Whole Milk (480 ml)
  • Salt And Black Pepper To Taste
  • 1/2 tsp (3 ml). Paprika
  • 1/4 tsp (1 ml). Cayenne Pepper


Instructions

  1. Set your oven to 325°F to warm up. In a bowl, combine the eggs, milk, paprika, cayenne, salt, and pepper. Slice the chilies lengthwise and place a single layer at the base of a 9 x 13-inch casserole dish. Sprinkle half of the shredded cheese on top of the chilies. Add another layer of chilies and cover with the remaining cheese. Evenly distribute the egg mixture over everything. Place this dish into a bigger baking dish or a baking sheet with rims. Fill the larger dish with hot water until it reaches the level of the egg mixture, then bake for 35 to 40 minutes until set. Slice into squares and enjoy with warm corn tortillas!
