Description
A delightful and easy-to-make banana bread infused with overripe bananas and Kodiak buttermilk pancake mix for a moist and rich flavor.
Ingredients
- 2 cups Kodiak buttermilk pancake mix
- 1 tsp cinnamon
- 1 tsp baking powder
- 3 medium overripe bananas (brown/spotty)
- 1/2 cup plain Greek yogurt
- 1 tbsp vanilla extract
- 2 large eggs
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup avocado oil (or canola)
- 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat oven to 325°F and prep a loaf pan by lightly spraying or rubbing with oil.
- Whisk together the Kodiak pancake mix, cinnamon, and baking powder in a large bowl until evenly combined.
- Mash the overripe bananas thoroughly in another large bowl.
- Combine the Greek yogurt, vanilla extract, eggs, brown sugar, milk, and oil with the mashed bananas. Mix well until smooth.
- Gradually combine the dry and wet ingredients, stirring just until incorporated. If desired, stir in chocolate chips.
- Pour the batter into the prepared loaf pan and top with additional chocolate chips if desired.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Notes
For maximum sweetness, use overripe bananas. Store bread in an airtight container for up to 3 days, or freeze individual slices to last longer.
