Description

A delightful and easy-to-make banana bread infused with overripe bananas and Kodiak buttermilk pancake mix for a moist and rich flavor.


Ingredients

  • 2 cups Kodiak buttermilk pancake mix
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 3 medium overripe bananas (brown/spotty)
  • 1/2 cup plain Greek yogurt
  • 1 tbsp vanilla extract
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup avocado oil (or canola)
  • 1/2 cup mini chocolate chips (optional)


Instructions

  1. Preheat oven to 325°F and prep a loaf pan by lightly spraying or rubbing with oil.
  2. Whisk together the Kodiak pancake mix, cinnamon, and baking powder in a large bowl until evenly combined.
  3. Mash the overripe bananas thoroughly in another large bowl.
  4. Combine the Greek yogurt, vanilla extract, eggs, brown sugar, milk, and oil with the mashed bananas. Mix well until smooth.
  5. Gradually combine the dry and wet ingredients, stirring just until incorporated. If desired, stir in chocolate chips.
  6. Pour the batter into the prepared loaf pan and top with additional chocolate chips if desired.
  7. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Notes

For maximum sweetness, use overripe bananas. Store bread in an airtight container for up to 3 days, or freeze individual slices to last longer.
