Description

  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 2-3 teaspoons key lime zest
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup powdered sugar (for frosting)
  • 1 tablespoon key lime juice (for frosting)
  • 1 tablespoon milk (for frosting)
  • ¼ teaspoon vanilla (for frosting)
  • Pinch of salt (optional, for frosting)
  • ½ teaspoon key lime zest (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat together the softened butter, granulated sugar, light brown sugar, and vanilla extract until creamy.
  3. Add the egg to the mixture and continue to beat until fully incorporated.
  4. Stir in the key lime zest.
  5. Whisk together the flour, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Cover the dough and chill for 30 minutes.
  8. Drop rounded tablespoons of dough onto a parchment-lined baking sheet.
  9. Bake for 10-12 minutes until the edges turn golden.
