Ingredients

- 1 ¾ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup powdered sugar (for frosting)
- 1 tablespoon key lime juice (for frosting)
- 1 tablespoon milk (for frosting)
- ¼ teaspoon vanilla (for frosting)
- Pinch of salt (optional, for frosting)
- ½ teaspoon key lime zest (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Beat together the softened butter, granulated sugar, light brown sugar, and vanilla extract until creamy.
- Add the egg to the mixture and continue to beat until fully incorporated.
- Stir in the key lime zest.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Cover the dough and chill for 30 minutes.
- Drop rounded tablespoons of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes until the edges turn golden.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
Notes
For a stronger lime flavor, add more key lime zest or juice. Store cookies in an airtight container at room temperature for up to one week.
