Description

A rich and creamy soup bursting with flavors, perfect for a cozy dinner while following a keto lifestyle.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups fresh spinach, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion and cook for 2-3 minutes until softened.
  4. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  5. Pour in the chicken broth and add the diced tomatoes, basil, oregano, and optional red pepper flakes. Bring to a simmer.
  6. Add the cooked chicken back into the pot and allow the soup to simmer for 10 minutes to meld the flavors together.
  7. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
  8. Lower the heat and stir in the heavy cream and Parmesan cheese. Continue stirring until the cheese has melted and the soup becomes creamy. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley or basil if desired.

Notes

For added depth, consider adding a splash of lemon juice before serving.
