A delicious, low-carb twist on classic meatloaf, made with ground turkey and parmesan cheese, perfect for healthy dining.
Ingredients
- 2 lbs ground turkey
- 2 large eggs
- 1 cup grated parmesan cheese
- 1/2 cup almond flour
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 1 tbsp Worcestershire sauce (sugar-free)
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- 1/3 cup sugar-free ketchup
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
Instructions
- Preheat the oven to 350°F. Grease a loaf pan or baking dish to prepare for the meatloaf mixture.
- In a skillet, sauté the diced onion and minced garlic over medium heat until softened and fragrant, around 3-4 minutes. Set aside to cool slightly.
- In a large bowl, combine the ground turkey, eggs, parmesan cheese, almond flour, Worcestershire sauce, tomato paste, Italian seasoning, smoked paprika, salt, and pepper. Mix until well combined.
- Stir in the sautéed onion and garlic, ensuring all ingredients are thoroughly incorporated.
- Shape the mixture into a loaf and place it in the prepared pan.
- In a separate small bowl, mix the sugar-free ketchup, apple cider vinegar, Dijon mustard, and garlic powder. Spread this glaze over the top of the meatloaf for added flavor.
- Bake in the preheated oven for approximately 1 hour. During the last 15 minutes, baste the loaf with the remaining glaze to enhance moisture and flavor.
- Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
