Description

Ingredients

  • 1 cup Almond Flour
  • ½ tbsp Baking Powder
  • 1 ½ tsp Pumpkin Pie Spice
  • ¼ tbsp Brown Sugar Substitute (or sweetener of choice)
  • 4 Eggs
  • 3 oz Cream Cheese
  • 1 tsp Vanilla Extract
  • ½ cup Pumpkin Puree
  • 4 tbsp Butter (melted)
  • Sugar-free maple syrup (for serving)
  • Chopped pecans (optional, for topping)
  • Fresh whipped cream (optional, for serving)


Instructions

  1. Place all ingredients into a blender and pulse until smooth and well incorporated.
  2. Preheat your waffle maker and spray with non-stick cooking spray if necessary.
  3. Pour about ¼ cup of batter onto the hot waffle maker and close it. Cook until steam slows down.
  4. Carefully open the waffle maker and remove the waffle when done. Repeat the process with remaining batter.
  5. Serve warm with sugar-free syrup, chopped pecans, and whipped cream if desired.

Notes

Using room temperature cream cheese helps achieve a smooth batter. Let the batter rest for a few minutes to enhance fluffiness.
