Ingredients
- – 3-5 slices deli roast beef (85-142 g)
- – 2 slices provolone cheese (56 g)
- – 2 tbsp grated plant-based cheese (15 g)
- – 1 tbsp coconut flour (8 g)
- – 1/2 cup green bell pepper, chopped (120 ml)
- – 1/8 cup onion, diced (30 ml)
- – 2 tbsp vegetable oil for cooking
- – 1 egg
Instructions
- Place a sheet of plastic wrap on your work surface and arrange the deli roast beef slices on top, allowing them to overlap slightly.
- Layer the provolone cheese over the roast beef, followed by the chopped green bell peppers and diced onions.
- Carefully roll everything together by lifting the plastic wrap with one hand while ensuring the filling stays in place with the other. Continue to lift the wrap to form a neat roll.
- In a food processor, combine 2 tablespoons of grated plant-based cheese with a handful of crushed rinds to create a fine mixture. Alternatively, use a resealable bag and a rolling pin or bottle to crush them by hand.
- Set up three dipping stations in order: one with coconut flour, another with beaten egg, and the last with the cheese and rind mixture. Roll the prepared beef roll through each station sequentially, allowing it to sit for a minute or two for the coating to adhere.
- Heat a non-stick skillet over medium heat and add vegetable oil, letting it warm up fully.
- Carefully place the roll in the pan. Using tongs, brown the ends of the roll for about a minute to seal in the contents.
- Continue cooking each side of the roll for 2-3 minutes, turning it a total of four times, until it is cooked through, which should take approximately 10-12 minutes in total.
