A spicy, cheesy, low-carb meatloaf combining ground beef and jalapeños for a comforting dish.
Ingredients
- 2 lbs ground beef
- 2 cups shredded sharp cheddar cheese
- 4 fresh jalapeños, finely diced (remove seeds for milder heat)
- 1 cup almond flour
- 4 large eggs
- 4 tablespoons sugar-free ketchup, plus extra for topping
- 2 tablespoons Worcestershire sauce (or coconut aminos for soy-free)
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: ¼ teaspoon chipotle powder or a handful of chopped scallions for added kick and color
Instructions
- Preheat oven to 375°F (190°C) and prepare a loaf pan with parchment paper or grease.
- In a large bowl, combine ground beef, cheddar, jalapeños, almond flour, eggs, ketchup, Worcestershire sauce, and all spices.
- Mix until just combined; avoid overmixing to maintain a tender texture.
- Press the mixture into the loaf pan, shaping it evenly.
- Spread a thin layer of sugar-free ketchup over the top for a glossy finish.
- Bake for 50–60 minutes, or until the internal temperature reaches 160°F.
- Let the meatloaf rest for 10 minutes before slicing. Garnish with extra jalapeño slices or fresh herbs, if desired.
