Description

Ingredients

  • 2 lbs ground beef
  • 2 cups shredded sharp cheddar cheese
  • 4 fresh jalapeños, finely diced (remove seeds for milder heat)
  • 1 cup almond flour
  • 4 large eggs
  • 4 tablespoons sugar-free ketchup, plus extra for topping
  • 2 tablespoons Worcestershire sauce (or coconut aminos for soy-free)
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: ¼ teaspoon chipotle powder or a handful of chopped scallions for added kick and color


Instructions

  1. Preheat oven to 375°F (190°C) and prepare a loaf pan with parchment paper or grease.
  2. In a large bowl, combine ground beef, cheddar, jalapeños, almond flour, eggs, ketchup, Worcestershire sauce, and all spices.
  3. Mix until just combined; avoid overmixing to maintain a tender texture.
  4. Press the mixture into the loaf pan, shaping it evenly.
  5. Spread a thin layer of sugar-free ketchup over the top for a glossy finish.
  6. Bake for 50–60 minutes, or until the internal temperature reaches 160°F.
  7. Let the meatloaf rest for 10 minutes before slicing. Garnish with extra jalapeño slices or fresh herbs, if desired.
