Ingredients

  • Juniper berries, 1 tablespoon (15 ml)
  • Balsamic vinegar, 1/2 cup (120 ml)
  • Olive oil, 1/4 cup (60 ml)
  • Garlic cloves, 3, minced
  • Fresh rosemary, 2 teaspoon s (10 ml), chopped
  • Fresh thyme, 2 teaspoon s (10 ml), chopped
  • Salt, 1 teaspoon (5 ml)
  • Black pepper, 1 teaspoon (5 ml)
  • Venison steaks, 4 (about 6 ounce (170 g) s each) (170 grams each)


Instructions

  1. Crush the juniper berries using a mortar and pestle.
  2. In a bowl, combine the crushed juniper berries, balsamic vinegar, olive oil, minced garlic, chopped rosemary, and chopped thyme.
  3. Add salt and black pepper to the mixture and stir well.
  4. Place the venison steaks in a shallow dish or resealable plastic bag.
  5. Pour the marinade over the venison steaks, ensuring they are well coated.
  6. Seal the dish or bag and refrigerate for at least 4 hours, or overnight for best results.
  7. Preheat a grill or grill pan to medium-high heat.
  8. Remove the venison steaks from the marinade and pat them dry with paper towels.
  9. Discard the leftover marinade.
  10. Grill the venison steaks for 4-5 minutes per side for medium-rare, or until desired doneness.
  11. Remove the steaks from the grill and let them rest for 5 minutes before serving.
