Ingredients
- Juniper berries, 1 tablespoon (15 ml)
- Balsamic vinegar, 1/2 cup (120 ml)
- Olive oil, 1/4 cup (60 ml)
- Garlic cloves, 3, minced
- Fresh rosemary, 2 teaspoon s (10 ml), chopped
- Fresh thyme, 2 teaspoon s (10 ml), chopped
- Salt, 1 teaspoon (5 ml)
- Black pepper, 1 teaspoon (5 ml)
- Venison steaks, 4 (about 6 ounce (170 g) s each) (170 grams each)
Instructions
- Crush the juniper berries using a mortar and pestle.
- In a bowl, combine the crushed juniper berries, balsamic vinegar, olive oil, minced garlic, chopped rosemary, and chopped thyme.
- Add salt and black pepper to the mixture and stir well.
- Place the venison steaks in a shallow dish or resealable plastic bag.
- Pour the marinade over the venison steaks, ensuring they are well coated.
- Seal the dish or bag and refrigerate for at least 4 hours, or overnight for best results.
- Preheat a grill or grill pan to medium-high heat.
- Remove the venison steaks from the marinade and pat them dry with paper towels.
- Discard the leftover marinade.
- Grill the venison steaks for 4-5 minutes per side for medium-rare, or until desired doneness.
- Remove the steaks from the grill and let them rest for 5 minutes before serving.
- Slice the steaks and serve immediately.
