A hearty, low-carb meatloaf that’s juicy and topped with a glossy glaze, perfect for cozy family dinners.
Ingredients
- 2 lbs ground beef (80/20 recommended)
- 1/2 cup almond flour
- 1/4 cup heavy cream
- 1 large egg
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup Worcestershire sauce
- 1 tablespoon Dijon mustard
- For the glaze:
- 1/2 cup sugar-free ketchup
- 2 tablespoons apple cider vinegar
- 1 tablespoon erythritol or preferred keto sweetener
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a standard loaf pan or prepare a baking sheet for free-form baking.
- In a large bowl, combine the ground beef, almond flour, heavy cream, egg, chopped onion, minced garlic, salt, and pepper.
- Add the Worcestershire sauce and Dijon mustard to the mixture.
- Gently mix all ingredients until just combined; do not overmix.
- Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
- In a small bowl, whisk together the sugar-free ketchup, apple cider vinegar, and keto sweetener for the glaze.
- Spread half of the glaze over the top of the meatloaf.
- Bake for 40 minutes, then spread the remaining glaze over the top.
- Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
For best flavor, sauté the onions and garlic before adding them to the mixture.
