Description

A hearty, low-carb meatloaf that’s juicy and topped with a glossy glaze, perfect for cozy family dinners.


Ingredients

  • 2 lbs ground beef (80/20 recommended)
  • 1/2 cup almond flour
  • 1/4 cup heavy cream
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • For the glaze:
  • 1/2 cup sugar-free ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon erythritol or preferred keto sweetener


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a standard loaf pan or prepare a baking sheet for free-form baking.
  2. In a large bowl, combine the ground beef, almond flour, heavy cream, egg, chopped onion, minced garlic, salt, and pepper.
  3. Add the Worcestershire sauce and Dijon mustard to the mixture.
  4. Gently mix all ingredients until just combined; do not overmix.
  5. Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
  6. In a small bowl, whisk together the sugar-free ketchup, apple cider vinegar, and keto sweetener for the glaze.
  7. Spread half of the glaze over the top of the meatloaf.
  8. Bake for 40 minutes, then spread the remaining glaze over the top.
  9. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For best flavor, sauté the onions and garlic before adding them to the mixture.
