Ingredients
- 1 to 1 ¼ lb ground turkey (90% lean)
- 8 oz mushrooms, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp oil
- ¾ tsp salt
- ½ tsp pepper
- 1 tbsp Worcestershire sauce
- 7 tbsp ketchup, divided
- 1 cup panko breadcrumbs
- ⅓ cup milk
- 2 eggs, lightly beaten
Instructions
- Preheat your oven to 400°F (204°C) and line a baking pan with foil, lightly oiling the foil to prevent sticking.
- In a pan, cook the finely chopped onions in oil until they soften, about 5 minutes.
- Add the minced garlic and chopped mushrooms to the pan, seasoning with salt and pepper. Cook for an additional 10 minutes until the mushrooms dry out.
- Mix the mushroom mixture with Worcestershire sauce and 3 tablespoons of ketchup. Allow it to cool for about 5 minutes.
- Combine panko breadcrumbs and milk in a separate bowl. Stir this mixture into the mushroom mix, followed by the eggs and ground turkey. Mix gently to combine all ingredients.
- Shape the mixture into a loaf and place it in the prepared baking pan. Top with the remaining ketchup.
- Bake for 50 minutes, or until the internal temperature reaches 170°F (77°C). Allow the meatloaf to rest for 10 minutes before slicing.
Notes
For added flavor, consider incorporating fresh herbs like parsley or thyme. Allowing the meatloaf to rest enhances flavor and moisture. If too dry, increase milk or eggs; if it falls apart, add more panko breadcrumbs.
