Description

A comforting and flavorful turkey meatloaf that combines ground turkey, sautéed onions, garlic, and mushrooms, topped with ketchup for a delicious finish.


Ingredients

  • 1 to 1 ¼ lbs of ground turkey (90% lean)
  • 8 oz of finely chopped mushrooms
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon Worcestershire sauce
  • ⅓ cup of milk
  • 2 lightly beaten eggs
  • 1 cup panko breadcrumbs
  • 3 tablespoons ketchup (plus extra for topping)


Instructions

  1. Preheat your oven to 400°F (204°C) and line a baking pan with foil, lightly oiling it.
  2. Cook chopped onions in oil until softened (about 5 minutes), then add minced garlic and chopped mushrooms, seasoning with salt and pepper. Cook for about 10 minutes until mushrooms are dry.
  3. Mix the cooled mushroom mixture with Worcestershire sauce and 3 tablespoons of ketchup. Let sit for 5 minutes.
  4. In a bowl, combine panko breadcrumbs with milk, stirring until incorporated.
  5. Add the breadcrumb mixture to the mushroom blend, along with the lightly beaten eggs and ground turkey. Gently mix until just combined.
  6. Shape the mixture into a meatloaf on the prepared pan and top with the remaining ketchup.
  7. Bake for 50 minutes or until the internal temperature reaches 170°F (77°C). Let rest for 10 minutes before slicing.

Notes

For added flavor, consider using fresh herbs or spices like parsley, thyme, or smoked paprika. Avoid overmixing to keep the meatloaf tender.
