Ingredients
- 1 tablespoon (15 ml) vegetable oil
- 2 1/2 pounds (1134 g) boneless beef stew meat (such as chuck), cut into 1 inch (2.5 cm) cubes
- Salt and freshly ground black pepper
- 1 medium yellow onion, finely chopped
- 4 carrots, peeled and cut into chunks
- 2 jalapeno peppers, seeded and minced
- 2 medium cloves garlic, minced (about 2 teaspoons/10 ml)
- 1/4 cup (60 ml) grape juice
- 2 cups (480 ml) homemade or store-bought low-sodium chicken stock
- 1/2 teaspoon allspice
- 1/4 teaspoon cinnamon
- 1 teaspoon hot pepper sauce
- 4 sprigs fresh thyme
- 2 bay leaves
- 1 teaspoon brown sugar
- 1 tablespoon (15 ml) grape juice vinegar
- 1 (14.5-ounce) can diced tomatoes, preferably fire roasted
- 1 tablespoon (15 ml) soy sauce
- 1 1/2 tablespoons steak sauce
- 1/2 cup chopped scallions
- 2 cups (480 ml) cooked long-grain white rice
Instructions
- Set your oven rack to a low-middle position and preheat it to 300°F. In a Dutch oven, heat vegetable oil over high heat until it smokes. Sprinkle salt and pepper over the beef. Place the beef in the pan and let it sear without moving until one side is deeply browned, roughly 6 minutes. Stir to release the meat, then incorporate the onions and carrots. Cook while stirring for 2 minutes, then lower the heat to medium and add the habaneros, garlic, and grape juice. Let it reach a boil and simmer for 2 minutes before introducing the chicken stock, allspice, cinnamon, hot pepper sauce, thyme, bay leaves, brown sugar, grape juice vinegar, tomatoes, soy sauce, and steak sauce.
- Bring it back to a boil, cover the pot, and move it to the oven. Let it continue cooking until the beef is so tender it can be torn apart with a fork, approximately an additional 1 1/2 hours.
- Once the stew is ready, take it out of the oven and remove the thyme sprigs and bay leaves. If the stew is too thin, simmer it on the stovetop until it reaches your desired thickness. Adjust seasoning with salt and pepper to taste. Top with scallions and serve right away with rice.
