Ingredients

  • 1 pound (454 g) beef bacon, diced
  • 1 large yellow onion, finely diced (about 1 1/2 cup (360 ml) s)
  • 3 medium jalapeno peppers, seeded* and diced (about 1 cup (240 ml))
  • 2 teaspoon (10 ml) s garlic, minced
  • 1/2 cup (100 g) light brown sugar, packed
  • 1/3 cup (80 g) apple cider vinegar
  • 1/4 cup (79 g) maple syrup
  • 1 teaspoon (5 ml) chili powder


Instructions

  1. In a medium pan set over medium heat, fry the bacon until it turns crispy. While it’s cooking, prepare a plate by lining it with a paper towel.
  2. Once the bacon is crisp, transfer it to the prepared plate. Keep it aside.
  3. Retain about ¼ cup of the bacon fat in the skillet, discarding the excess carefully.
  4. Add the diced onion and jalapenos to the pan. Lower the heat to medium-low and cook, stirring frequently, until the onions become caramelized, approximately 15-20 minutes.
  5. Incorporate the garlic, brown sugar, apple cider vinegar, maple syrup, chili powder, and bacon into the mixture.
  6. Let the mixture simmer for 7-10 minutes until it reaches a jam-like thickness.
  7. Serve either warm or chilled. If it has been stored in the fridge, you may want to reheat it slightly.

Notes

  • For a spicier jam, keep some jalapeno seeds when dicing.
  • Ensure onions are well caramelized for a richer flavor.
  • Adjust sweetness with more or less brown sugar and maple syrup to taste.
