Ingredients
- 1 pound (454 g) beef bacon, diced
- 1 large yellow onion, finely diced (about 1 1/2 cup (360 ml) s)
- 3 medium jalapeno peppers, seeded* and diced (about 1 cup (240 ml))
- 2 teaspoon (10 ml) s garlic, minced
- 1/2 cup (100 g) light brown sugar, packed
- 1/3 cup (80 g) apple cider vinegar
- 1/4 cup (79 g) maple syrup
- 1 teaspoon (5 ml) chili powder
Instructions
- In a medium pan set over medium heat, fry the bacon until it turns crispy. While it’s cooking, prepare a plate by lining it with a paper towel.
- Once the bacon is crisp, transfer it to the prepared plate. Keep it aside.
- Retain about ¼ cup of the bacon fat in the skillet, discarding the excess carefully.
- Add the diced onion and jalapenos to the pan. Lower the heat to medium-low and cook, stirring frequently, until the onions become caramelized, approximately 15-20 minutes.
- Incorporate the garlic, brown sugar, apple cider vinegar, maple syrup, chili powder, and bacon into the mixture.
- Let the mixture simmer for 7-10 minutes until it reaches a jam-like thickness.
- Serve either warm or chilled. If it has been stored in the fridge, you may want to reheat it slightly.
Notes
- For a spicier jam, keep some jalapeno seeds when dicing.
- Ensure onions are well caramelized for a richer flavor.
- Adjust sweetness with more or less brown sugar and maple syrup to taste.
