Description

Ingredients

  • pounds ground turkey breast
  • 1 cup chopped onions
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1½ cups sliced carrots
  • 1½ cups sliced celery
  • 1 (28-ounce) can diced tomatoes
  • 3 cups beef broth
  • 4 tablespoons tomato paste
  • Fresh or dried basil
  • Fresh or dried oregano
  • Fresh or dried thyme
  • Pinch of chili pepper flakes
  • ¼ cup fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey, salt, and pepper, cooking until browned and onions are translucent.
  3. Transfer the turkey mixture to a Dutch oven.
  4. In the same skillet, sauté sliced carrots and celery until slightly tender.
  5. Transfer the veggies to the Dutch oven.
  6. Deglaze the skillet with diced tomatoes, scraping the bottom to incorporate the flavors.
  7. Add beef broth and tomato paste to the pot, then stir in herbs.
  8. Bring to a boil, then reduce heat and let simmer for 30 to 40 minutes.
  9. Add parsley during the last 5-10 minutes of cooking.

Notes

For a creamier texture, blend a portion of the soup with an immersion blender. Customize herbs as per your preference.
