Ingredients
- 1½ pounds ground turkey breast
- 1 cup chopped onions
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1½ cups sliced carrots
- 1½ cups sliced celery
- 1 (28-ounce) can diced tomatoes
- 3 cups beef broth
- 4 tablespoons tomato paste
- Fresh or dried basil
- Fresh or dried oregano
- Fresh or dried thyme
- Pinch of chili pepper flakes
- ¼ cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey, salt, and pepper, cooking until browned and onions are translucent.
- Transfer the turkey mixture to a Dutch oven.
- In the same skillet, sauté sliced carrots and celery until slightly tender.
- Transfer the veggies to the Dutch oven.
- Deglaze the skillet with diced tomatoes, scraping the bottom to incorporate the flavors.
- Add beef broth and tomato paste to the pot, then stir in herbs.
- Bring to a boil, then reduce heat and let simmer for 30 to 40 minutes.
- Add parsley during the last 5-10 minutes of cooking.
Notes
For a creamier texture, blend a portion of the soup with an immersion blender. Customize herbs as per your preference.
