Ingredients

  • – 1 pound (454 g) beef sausages
  • – 4 strips beef bacon
  • – 1/2 medium onion, chopped
  • – 3 cloves garlic, minced
  • – 4 (14 ounce (397 g)) cans white beans (cannellini), drained
  • – 4 cups (946 ml) beef broth
  • – 1/4 teaspoon (1 ml) Italian seasoning
  • – 1/4 teaspoon (1 ml) dried rosemary
  • – 2 small carrots, peeled & chopped small
  • – 2 cups (480 ml) (packed) fresh baby spinach
  • – Salt & pepper to taste


Instructions

  1. Place the beef sausages and chopped beef bacon in a large soup pot.
  2. Cook over medium-high heat until both meats are somewhat crispy and the fat has been released, which may take up to 15 minutes. Meanwhile, prepare the remaining ingredients.
  3. Remove the sausage and bacon from the pot and set them aside on a plate. Leave about 2 tablespoons of the rendered fat in the pot, removing any excess.
  4. Add the chopped onion to the pot and sauté for 3-5 minutes until it becomes soft and begins to slightly brown.
  5. Mix in the minced garlic and cook for another 30 seconds.
  6. Introduce the drained white beans, beef broth, Italian seasoning, and dried rosemary. Stir thoroughly, making sure to scrape up any browned bits from the bottom of the pot.
  7. Take the pot off the heat. Use an immersion blender to purée the soup, leaving some beans whole for texture. Remember, the soup will thicken as it continues to cook, so keep the current consistency in mind. If an immersion blender isn’t available, blend a portion of the beans in a regular blender or mash them with a potato masher or fork for a rustic feel.
  8. Return the sausage and bacon to the pot, then add the chopped carrots. Heat the pot on high until the soup starts to boil. Partially cover with a lid and lower the heat to let it simmer. Cook for 15-20 minutes until the carrots have softened and the soup has further thickened.
  9. Stir in the baby spinach and allow it to wilt for a minute or two. Taste the soup and add salt and pepper to your liking. Serve right away.
