Delicious Italian grinder salad sandwiches featuring a mix of savory meats, fresh vegetables, and creamy cheese, perfect for summer picnics and gatherings.
Ingredients
- 4 Italian sub rolls
- 2 cups chopped lettuce
- 2 ripe tomatoes, diced
- 1 red onion, sliced
- 1/2 cup pepperoncini
- 6 oz salami
- 6 oz ham
- 6 oz provolone cheese
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Slice the Italian sub rolls in half and toast them if desired.
- In a bowl, combine chopped lettuce, diced tomatoes, sliced red onions, and pepperoncini.
- Layer salami, ham, and provolone cheese on the bottom half of the rolls.
- Spoon the salad mixture on top of the meats and cheese.
- Drizzle with olive oil and vinegar, then sprinkle with oregano, salt, and pepper.
- Place the top half of the rolls on and press down gently.
- Slice the sandwiches and serve immediately.
Notes
For added flavor, let sandwiches chill in the fridge for 30 minutes before slicing. Wrap in parchment for serving.
