Description

This irresistible stuffed ham cannelloni features creamy ricotta, savory ham, and earthy mushrooms, delivering a delightful meal for family gatherings.


Ingredients

  • 8 medium-thick slices of ham
  • 1 small onion, finely chopped
  • ½ cup sliced mushrooms
  • 1 cup well-drained, pre-cooked spinach
  • 250 g reduced-fat ricotta
  • 2 tablespoons reduced-fat cream cheese or shredded cheese
  • Salt and pepper to taste
  • Vegetable spray


Instructions

  1. Warm a skillet over medium heat and add a touch of vegetable spray.
  2. Sauté the finely chopped onion until caramelized and golden-brown.
  3. Add sliced mushrooms and cook until softened.
  4. In a large bowl, combine the ricotta and cream cheese, mixing until smooth.
  5. Stir in the well-drained spinach and season with salt and pepper.
  6. Lay out the ham slices and spread a portion of filling onto each slice.
  7. Roll each ham slice into a cannelloni shape and tuck the edges.
  8. Lightly grease a baking dish and arrange the stuffed cannelloni.
  9. Drizzle with light tomato sauce and sprinkle with cheese.
  10. Preheat the oven to 200°C (392°F) and bake for 15-20 minutes until cheese melts.
