Ingredients
- 8 medium-thick slices of ham
- 1 small onion, finely chopped
- ½ cup sliced mushrooms
- 1 cup well-drained, pre-cooked spinach
- 250 g reduced-fat ricotta
- 2 tablespoons reduced-fat cream cheese or shredded cheese
- Salt and pepper to taste
- Vegetable spray
Instructions
- Warm a skillet over medium heat and add a touch of vegetable spray.
- Sauté the finely chopped onion until caramelized and golden-brown.
- Add sliced mushrooms and cook until softened.
- In a large bowl, combine the ricotta and cream cheese, mixing until smooth.
- Stir in the well-drained spinach and season with salt and pepper.
- Lay out the ham slices and spread a portion of filling onto each slice.
- Roll each ham slice into a cannelloni shape and tuck the edges.
- Lightly grease a baking dish and arrange the stuffed cannelloni.
- Drizzle with light tomato sauce and sprinkle with cheese.
- Preheat the oven to 200°C (392°F) and bake for 15-20 minutes until cheese melts.
