Description

A delightful cherry cake bursting with sweet and tangy flavors, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup fresh or frozen cherries, pitted
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the butter and sugar in a mixing bowl until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, mix the flour, baking powder, and salt.
  5. Gradually add the flour mixture and milk to the butter mixture, alternating between the two and starting and ending with the dry ingredients.
  6. Gently fold in the pitted cherries.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For frozen cherries, do not thaw before adding to the batter to preserve texture. Consider adding almond extract for an enhanced flavor.
