Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1 cup fresh or frozen cherries, pitted
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream together the butter and sugar in a mixing bowl until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In a separate bowl, mix the flour, baking powder, and salt.
- Gradually add the flour mixture and milk to the butter mixture, alternating between the two and starting and ending with the dry ingredients.
- Gently fold in the pitted cherries.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For frozen cherries, do not thaw before adding to the batter to preserve texture. Consider adding almond extract for an enhanced flavor.
