Description

A comforting dish featuring tender chicken breasts seared and cooked in a rich garlic Parmesan sauce using an Instant Pot.


Ingredients

  • 1.52 lbs boneless, skinless chicken breasts (about 3-4 medium breasts)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 8-10 cloves garlic, minced
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened (optional)
  • 3/4 cup grated Parmesan cheese
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry, optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides generously with salt, black pepper, Italian seasoning, and optional red pepper flakes.
  3. Select the “Sauté” function on your Instant Pot and heat until it indicates

Notes

For even cooking, use chicken breasts of similar size. Adjust seasonings to taste.
