Description
A comforting dish featuring tender chicken breasts seared and cooked in a rich garlic Parmesan sauce using an Instant Pot.
Ingredients
- 1.5–2 lbs boneless, skinless chicken breasts (about 3-4 medium breasts)
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 8-10 cloves garlic, minced
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper, freshly ground
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 4 oz cream cheese, softened (optional)
- 3/4 cup grated Parmesan cheese
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry, optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels.
- Season both sides generously with salt, black pepper, Italian seasoning, and optional red pepper flakes.
- Select the “Sauté” function on your Instant Pot and heat until it indicates
Notes
For even cooking, use chicken breasts of similar size. Adjust seasonings to taste.
