Ingredients

  • 3-4 chicken breasts, (1.5 lb/650g), cut into bite-sized pieces
  • 4 tbsp (60 ml) cornstarch, (cornflour UK)
  • 1 tsp (5 ml) salt
  • 3 tbsp (45 ml) vegetable oil, for frying
  • 3 cloves garlic, minced
  • 1 tbsp (15 ml) ginger paste
  • 115g/1/3 cup honey
  • 4 tbsp (60 ml) soy sauce
  • 1 tsp (5 ml) toasted sesame oil
  • 1 tbsp (15 ml) rice vinegar or apple cider vinegar
  • 1/2 tsp (3 ml) chilli flakes
  • 2 tsp (10 ml) sesame seeds, for garnish
  • 2 green onions, sliced, for garnish


Instructions

  1. Slice the chicken breasts into uniform, small chunks. In a big bowl, blend the cornstarch with the salt. Add the chicken to the bowl and mix until each piece is well-coated.
  2. Prepare the glaze by combining honey, soy sauce, sesame oil, rice vinegar, and chili flakes in a medium bowl. Set this mixture aside until it is needed.
  3. Warm up the vegetable oil in a large wok or frying pan. Shake off any excess cornstarch from the chicken pieces before frying them in the oil until they become golden and are thoroughly cooked. To prevent overcrowding, cook the chicken in batches.
  4. Reduce the heat. Using the same pan, add the minced garlic and ginger, sautéing them for half a minute on low heat. Next, pour in the glaze mixture you prepared earlier, stirring to cover the chicken and allowing it to thicken for 5-7 minutes or until the sauce is thick. Sprinkle with sesame seeds and remove from heat. Serve garnished with sliced green onions.
