Colorful and flavorful honey roasted rainbow carrots paired with creamy burrata cheese and tart pomegranate arils create an unforgettable dish, perfect for any occasion.
Ingredients
- 2 pounds rainbow carrots, peeled
- 2 tablespoons butter
- 2 tablespoons honey (preferably orange blossom)
- 1/8 teaspoon ground cinnamon
- Salt and pepper (to taste)
- Burrata cheese (pinched into small pieces)
- 1 pomegranate (arils removed)
Instructions
- Preheat the oven to 400°F (200°C).
- Melt the butter in a saucepan and stir in the honey and optional cinnamon.
- Toss the peeled carrots in the honey butter mixture until evenly coated.
- Arrange the carrots on a baking sheet and season with salt and pepper.
- Roast in the preheated oven for 15 minutes.
- Flip the carrots carefully and continue cooking for another 15 to 20 minutes, checking for doneness.
- Once done, transfer the roasted carrots to a serving platter.
- Sprinkle burrata cheese on top and finish with pomegranate arils just before serving.
