Description

Colorful and flavorful honey roasted rainbow carrots paired with creamy burrata cheese and tart pomegranate arils create an unforgettable dish, perfect for any occasion.


Ingredients

  • 2 pounds rainbow carrots, peeled
  • 2 tablespoons butter
  • 2 tablespoons honey (preferably orange blossom)
  • 1/8 teaspoon ground cinnamon
  • Salt and pepper (to taste)
  • Burrata cheese (pinched into small pieces)
  • 1 pomegranate (arils removed)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Melt the butter in a saucepan and stir in the honey and optional cinnamon.
  3. Toss the peeled carrots in the honey butter mixture until evenly coated.
  4. Arrange the carrots on a baking sheet and season with salt and pepper.
  5. Roast in the preheated oven for 15 minutes.
  6. Flip the carrots carefully and continue cooking for another 15 to 20 minutes, checking for doneness.
  7. Once done, transfer the roasted carrots to a serving platter.
  8. Sprinkle burrata cheese on top and finish with pomegranate arils just before serving.

Notes

For extra flavor, consider adding fresh herbs like thyme or parsley, or a sprinkle of lemon zest before serving.
