Ingredients
- 2 pounds (900 g) medium carrots (about 8)
- 3 cloves garlic
- 3 tablespoons (45 ml) vegetable oil
- 1 1/2 tablespoons (22.5 ml) honey
- 1 teaspoon (5 ml) kosher salt
- 1/4 teaspoon (1 ml) freshly ground black pepper
- 1/2 small lemon
- Chopped fresh parsley leaves, for garnish (optional)
Instructions
- Position an oven rack in the center and preheat the oven to 425°F.
- Peel and trim the medium carrots, then slice them crosswise into pieces that are 2 inches long. If the carrots are thicker than 1 inch, slice them lengthwise into halves or quarters, aiming for pieces about 1/2 to 3/4 inch thick; otherwise, keep them whole. Arrange the carrot pieces on a baking sheet with a rim. Finely chop the garlic cloves.
- In a small saucepan, heat the vegetable oil over medium heat. Add the minced garlic and cook, stirring occasionally, until the aroma is released, approximately 30 seconds. Take the pan off the heat, then stir in the honey until well mixed.
- Pour half of the honey mixture over the carrots and mix until they are evenly coated. Sprinkle with kosher salt and freshly ground black pepper, and mix again to coat. Distribute the carrots in a single layer.
- Bake the carrots for 15 minutes. Give them a stir, then continue baking until they become tender and the undersides are nicely browned, another 15 to 20 minutes. Pour the remaining honey mixture over the carrots and squeeze the juice from half a lemon over them, stirring to coat. Move them to a serving dish. If desired, sprinkle with chopped fresh parsley leaves for garnish.
Notes
- Add a sprinkle of ground cumin or smoked paprika to enhance the flavor of the carrots before baking.
- Stir the carrots halfway through baking for even cooking and a nice caramelization.
- Brighten up the flavors by squeezing lemon juice over the carrots before serving.
