Ingredients
- 2 cups carrots, cut into 1-inch pieces
- 2 cups green beans, trimmed
- 3 tablespoons extra virgin olive oil
- 1/4 cup honey
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the green beans, snapping off the stem ends.
- Peel and cut the carrots into 1-inch pieces on a diagonal.
- In a small bowl, combine olive oil, honey, balsamic vinegar, minced garlic, and dried thyme. Season with salt and pepper, and whisk until well combined.
- Toss the carrots and green beans with the honey glaze in a large bowl until evenly coated.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast in the oven for 20-25 minutes, stirring halfway, until tender and caramelized. For additional caramelization, broil for the last minute, watching closely.
- Garnish with chopped fresh parsley or toasted sesame seeds before serving.
