Ingredients
- 2 large sweet potatoes (500g) peeled and cubed
- 1 large yellow onion (150g) sliced
- 3 cloves garlic, chopped
- 2-3 tablespoons (30-45ml) vegetable oil
- 1-2 teaspoons (5-10ml) seasoning of choice
- 16 oz. (450g) beef sausage, cut into 1-inch slices – such as beef sausage
Instructions
- Set your oven to 425°F to preheat.
- Place the sweet potato cubes, sliced onion, and chopped garlic on a baking sheet. Pour the vegetable oil over them and sprinkle your chosen seasoning. Mix well to ensure even coverage and arrange them in a single layer.
- Bake the sweet potatoes, onions, and garlic for 20 minutes. Take them out, mix them again, spread them evenly, and return to the oven for an additional 15 minutes. Once more, take them out, use a spatula for mixing, and spread them out again.
- Position the sausage slices between the sweet potato mixture, ensuring the cut sides are touching the hot baking sheet.
- Bake for another 10 minutes until the sausage slices are nicely browned. Enjoy your meal.
