Description

Sweet and savory roasted carrots with a honey balsamic glaze, perfect for any meal.


Ingredients

  • 2 pounds of carrots
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the carrots, trimming off the ends.
  3. Cut the carrots into uniform 1-inch pieces.
  4. In a small bowl, combine balsamic vinegar, honey, olive oil, minced garlic, chopped thyme, salt, and black pepper. Whisk until well combined.
  5. Place the carrot pieces in a large bowl and pour the honey balsamic glaze over them. Toss until evenly covered.
  6. Spread the carrots in a single layer on a baking sheet.
  7. Roast in the oven for 25-30 minutes, flipping halfway through.
  8. Check for tenderness and caramelization before serving warm, garnished with extra thyme.

Notes

For a more intense flavor, consider using a thicker balsamic glaze. Don’t overcrowd the baking sheet for optimal caramelization.
