Sweet and savory roasted carrots with a honey balsamic glaze, perfect for any meal.
Ingredients
- 2 pounds of carrots
- ¼ cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the carrots, trimming off the ends.
- Cut the carrots into uniform 1-inch pieces.
- In a small bowl, combine balsamic vinegar, honey, olive oil, minced garlic, chopped thyme, salt, and black pepper. Whisk until well combined.
- Place the carrot pieces in a large bowl and pour the honey balsamic glaze over them. Toss until evenly covered.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes, flipping halfway through.
- Check for tenderness and caramelization before serving warm, garnished with extra thyme.
Notes
For a more intense flavor, consider using a thicker balsamic glaze. Don’t overcrowd the baking sheet for optimal caramelization.
