Description
A vibrant homemade Mexican pizza combining seasoned meat, refried beans, and layered cheeses for a flavorful dish that’s easy to enjoy.
Ingredients
- 1 lb lean ground beef (or turkey/plant-based)
- 1 packet (1 oz) taco seasoning (or 2 Tbsp homemade)
- ½ cup water
- 6 medium flour tortillas (lightly toasted)
- 1 can (16 oz) refried beans (heated)
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato (diced)
- 1 green onion (diced)
- 1 small can sliced black olives
- Sour cream, guacamole, shredded lettuce, diced avocado, hot sauce, crushed tortilla chips
Instructions
- In a skillet, cook the ground beef over medium heat until it’s browned. Drain any excess fat.
- Add the taco seasoning and water to the pan, and let it simmer for about 5 minutes to blend the flavors.
- Warm the refried beans in a separate pot.
- Lightly toast the tortillas in a skillet or oven for 3–5 minutes until golden and flexible.
- On a baking sheet, lay out 3 tortillas. Spread each tortilla with a layer of refried beans, then top with the seasoned meat mixture.
- Place one additional tortilla on top of each stack.
- Spoon enchilada sauce generously over each stack of tortillas.
- Sprinkle combined cheddar and pepper-jack cheeses on top, then add diced tomatoes, green onions, and black olives.
- Bake the assembled pizzas at 400°F for 10–12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for 2–3 minutes, slice into wedges, and serve warm. Additional toppings like sour cream, guacamole, and shredded lettuce can enhance the experience.
Notes
For a healthier option, use turkey or plant-based ground meat. Customize toppings based on personal preference.
