Description

Crispy homemade French fries with a fluffy interior, seasoned to perfection.

Ingredients

  • 4 large russet potatoes
  • Cold water (for soaking)
  • Vegetable oil for frying (canola, peanut, or sunflower)
  • Sea salt (to taste)
  • 1 tsp garlic powder
  • 1 tsp paprika or smoked paprika
  • 1 tbsp grated parmesan cheese
  • Chopped fresh herbs (rosemary, parsley, thyme)

Instructions

  1. Peel and cut the potatoes into even-sized sticks, about 1/4 inch thick.
  2. Soak the cut potato sticks in cold water for 30 minutes to an hour.
  3. Drain the potatoes and pat them dry thoroughly with kitchen towels.
  4. Heat vegetable oil in a deep fryer or heavy-bottomed pot to about 325°F (160°C).
  5. Fry a batch of potatoes for about 3-5 minutes until they begin to soften, then drain on paper towels.
  6. Increase the oil temperature to 375°F (190°C) and fry the blanched potatoes in batches until golden brown and crispy, about 3-4 minutes.
  7. Sprinkle the fries with sea salt, garlic powder, paprika, and grated parmesan while still hot, then toss with fresh herbs.

Notes

Serve fries immediately for the best texture. Consider adding unique toppings like chili powder or truffle oil.
